Someday Sourdough is a plant-based micro bakery on Chicago’s far north side. After facing a slew of post-pandemic health issues, self-taught baker Ania Bilinska became obsessed with the concept of food as medicine.

She began baking sourdough bread, and used her passion to begin baking more sourdough pastries and desserts. From this journey, Someday Sourdough was born.

Someday Sourdough specializes in plant-based breads and baked goods that are good to the body, good to the Earth, and good to the soul. Ania bakes treats with organic grains (including gluten free offerings), natural sweeteners, unique botanicals, seasonal flavors, and no seed oils.
